Practical Hub with MECWA Care

Last week, Maggie Beer Foundation hosted a hands-on practical cooking class as part of a Hub with MECWA Care in Melbourne.

Senior Chef Trainer Michael, alongside Chef Trainers Amanda and Manish, worked shoulder-to-shoulder with MECWA Care chefs and cooks in a high-energy session focused on flavour, technique and confident decision-making in the kitchen.

One standout for Chef Trainer Amanda was the level of engagement throughout the session. Chefs were keen to ask questions, share ideas and build on their existing skills, creating an open and collaborative learning environment.

The session centred on maximising flavour through smart cooking techniques. Participants were divided into four teams, each nominating a head chef. With 90 minutes on the clock, teams prepared their dishes before presenting them on a shared table for group discussion and feedback.

Throughout the cook, conversations explored aroma, seasoning and why flavour development matters. There was a strong focus on using technique to drive the Maillard reaction, as well as the importance of tasting and seasoning with intention before presenting a dish.

The result was a practical, grounded session built on learning, collaboration and confident cooking.
