A silky and luscious easy to make chocolate mousse made with tofu.
Method
- Drain the tofu of any liquid and set aside.
- Add the remaining mousse ingredients to a pot. Over low heat melt the chocolate while stirring, then remove from the heat.
- Add the tofu to a food processor, blend until smooth then transfer into a planetary mixer bowl.
- Add the chocolate to the bowl then whisk on medium speed for 10 minutes, stopping regularly to scrape the sides of the bowl.
- Divide the mousse into serving trays or individual portions and place in the fridge to chill.
- Serve with whipped cream orange segments, and a sprinkle of grated chocolate.
