Masterclass champion – Stephen Milsted, Lifeview

Although Christmas has passed it was lovely to receive the below, from one of our 2019 Sydney Masterclass participants. Too good not to share we thought you too might be motivated by the efforts Stephen and his team put in to creating a special Christmas feast for those residents on a texture modified diet at ‘Lifeview’. We are so proud of all Stephen took away from the Masterclass – lucky residents!!

From Stephen’s email:

“I thought I would share some examples of how we presented our Christmas party foods at the Lifeview Resident & Relative Christmas Parties. Inspired by the Maggie Beer Master Class held in September in Sydney the team of Chefs at Lifeview are constantly working on ways to enhance the taste and presentation of Texture Modified Meals to residents.  The photos attached are a mixture of savoury and sweet items, both level 4 and 5, from Lifeview homes. They were very well received by the residents and family as they presented as true Christmas party food, with comments such as “I feel included to the party for the first time”. We had requests for more from some of the recipients on the night, which was great.

The items included:

Savoury: Roasted Beetroot, Hommus and Balsamic with Fetta Paste. Smoked Salmon and Cream Cheese with Chives, Prawns with Dill and Cocktail Dressing, Roast Chicken and Mayonnaise with Avocado.

Dessert: Lemon Curd, Sweet Mince Tart with Custard, Chocolate and Brandy Ganache with Vanilla Cream, two flavours of homemade No-melt Ice Cream topped with Raspberry Coulis.

Thank you once again for the opportunity to discover fresh ideas and be challenged to do things differently for the residents and making a difference to those we care for in our homes at Lifeview.

As part of the changes we have implemented to date, we have added a specialist seafood supplier, meaning we are now supplied with a large variety of fresh seafood / seasonal fish species, at a reasonable cost, bringing a level of quality and flexibility to our menu.

We will continue to make changes across our menus and meal service, stepping outside the status quo and, improving on the industry leading dining experience, we believe, we offer to the residents of Lifeview.
