What’s in season?

This winter has certainly been tough for so many but finally the days are starting to get longer and we begin to enjoy the blue skies that herald spring on its way.

Every season allows us to savour certain fruits and vegetables at their best and this month is no different. Lemons, and all citrus are ripening in abundance, so this month we are sharing a classic lemon posset recipe with you. You will also find rhubarb is fantastic this month.

You can also enjoy root vegetables at their best – carrots, beetroot, parsnips, potato, silver-beet, swede, sweet potato and turnip, all of which are delicious when drizzled with some olive oil, seasoned with salt and pepper and roasted in the oven to allow the flavours to really come out.

Other vegetables in season are avocado, broccoli, Brussel sprouts, cabbage, cauliflower, fennel, horseradish, Jerusalem artichokes, leeks – so many choices to sample!
