Method:
Pour 600ml of water into a saucepan, add the ginger and turmeric and place on the stove. Bring to the boil then reduce to a gentle simmer for 5 minutes to infuse. Remove from the heat and strain. Add in the maple syrup, fresh lemon juice and the remaining cold water. Serve over ice with fresh mint and a slice of lemon.
