Method:
Drain the tofu of any liquid and set aside. Add the remaining mousse ingredients to a pot. Over low heat melt the chocolate while stirring, then remove from the heat. Add the tofu to a food processor, blend until smooth then transfer into a planetary mixer bowl. Add the chocolate to the bowl then whisk on medium speed for 10 minutes, stopping regularly to scrape the sides of the bowl. Divide the mousse into serving trays or individual portions and place in the fridge to chill. To serve: Serve with whipped cream orange segments, and a sprinkle of grated chocolate.
