Method
- Place a large pot over medium high heat, add the oil, onion and a large pinch of salt, gently cook without colour for 10-15 minutes or until transparent.
- Add the bacon and thyme, cook for 2-3 minutes, then stir in the stock and potato, bring to the boil.
- Simmer until the potato is just tender, add the corn, cream and milk and simmer for a further 5 minutes.
- Remove from the heat, stir in the kale and check seasoning, serve warm.
