Method:
Into a mixing bowl, add the cream, condensed milk, skim milk powder and xanthan gum (add honey and salt if using). Whip to stiff peaks. Taste the mix to test if it’s melting when in the mouth. If necessary, add 0.2g of xanthan gum at a time until stable though not sticky. Divide the mixture into serving trays and place in the cool room to chill. Serve cold directly from the fridge. Note Serve within 24 hours. Keep refrigerated until serving. Flavour ideas Swirl through fruit compotes, coffee, apple pie, chai, London Fog (Earl Grey tea), rhubarb & strawberry, salted honey, birthday cake, mud cake, or peanut butter.
