Festive Salad with Potato, Ham, Cranberries & Kale

A delicious meal or side salad made using your left over Christmas ham.


  1. Preheat a fan forced oven to 180c and line two oven trays with parchment paper.
  2. Slice the potatoes 5mm thick and place into a large bowl with oil, salt and pepper, toss to evenly coat. Spread the potatoes (single layer) over the prepared trays and bake in the oven for 25-35 minutes or until golden. (You may need to turn during cooking). Remove from the oven, set aside.
  3. Peel and thinly slice the onion, place into a large frypan with oil and seasoning, cook over medium high heat until caramelized, set aside.
  4. Tear the kale, place into a large bowl with the dressing and mix well, leave to sit for 5 minutes before adding all the remaining ingredients; parsley, cranberries, ham, potatoes and onion, toss well and serve immediately.
