Hearty Bacon and Corn Chowder

A creamy, textured, meal in one soup, bringing together the delightful flavours of cooked onion, bacon, thyme, corn and potato

Method

  1. Place a large pot over medium high heat, add the oil, onion and a large pinch of salt, gently cook without colour for 10-15 minutes or until transparent.
  2. Add the bacon and thyme, cook for 2-3 minutes, then stir in the stock and potato, bring to the boil.
  3. Simmer until the potato is just tender, add the corn, cream and milk and simmer for a further 5 minutes.
  4. Remove from the heat, stir in the kale and check seasoning, serve warm.
