A great non-transitional option to serve with Texture Modified Desserts and thickened fluids, protein rich and a perfect sweet treat for end of meal.
Method
- Into a mixing bowl, add the cream, condensed milk, skim milk powder and xanthan gum (add honey and salt if using).
- Whip to stiff peaks.
- Taste the mix to test if it’s melting when in the mouth.
- If necessary, add 0.2g of xanthan gum at a time until stable though not sticky.
- Divide the mixture into serving trays and place in the cool room to chill.
- Serve cold directly from the fridge.
- Serve within 24 hours.
- Keep refrigerated until serving.
- Swirl through fruit compotes, coffee, apple pie, chai, London Fog (Earl Grey tea), rhubarb & strawberry, salted honey, birthday cake, mud cake, or peanut butter.
