Warm Pear & Chocolate Crumble

Did you know that this delicious dessert delivers four times the energy and three times the fibre of a serving of tinned fruit and ice cream?

Method

Preheat oven to 220 degrees Celsius. Place sugar, flour and cold butter into a food processor and pulse until the mixture starts to come together. Add almonds, oats and continue to pulse the mixture until it forms a large crumb. Your end result will depend on the food processor and temperature of the butter, make sure it's cold. Spread the crumb mix evenly on a tray and refrigerate.   To make the pear filling, place the butter in to a large pot or pan over high heat. Once the butter has melted, add the pears and cook for 10 - 15 minutes or until soft, but not falling apart. Remove from the heat and allow pears to cool. Place 130g of cooked pear into each ramekin and add 10g of chocolate. Top each with 47g of crumble topping. Place ramekins on a tray and bake in preheated oven for 15 minutes or until golden. Serve warm, with a scoop of good vanilla ice cream.
